HCG Diet Phase 2 Recipes

This page is dedicated to HCG Phase 2 Friendly Recipes. I will also include links to phase 2 friendly items that I find along the way.

Tilapia Fish Cake

100 grams tilapia (you can substitute crab, chopped shrimp or lobster)
1 tbsp minced celery
1 tbsp minced raw onion
1 tsp lemon juice
1/2 wasa cracker, crushed (I found a whole one makes it too dry)
Garlic salt and pepper to taste
Cook fish, celery and onion in a covered microwave dish for 1 1/2 min to make the fish easier to flake and to soften the onion and celery.
Do not pour out any liquid, you'll need this to help as a binder.
Add lemon juice, crushed wasa and seasoning to taste.
Form into a patty and cook in a covered frypan until brown on both sides. About 3 min per side.
Drizzle some hot sauce on it if you like it spicey.
Delicious!
These would probably freeze easily if you want to make a few at a time.

Onion Crusted Veal Cube Steak


100gr lean veal cube steak (you can substitute steak, chicken, or fish with this recipe)

1 tbsp minced dried onion. (1 tbsp= 1/4 of an onion)
Garlic Powder
Sea Salt
Pepper

(you can use whatever spice suits you)

Spice both sides your cube steak (or whichever protein you decide to use)
Sprinkle 1/2 of the onion flakes on one side and press into the meat
Sprinkle the other 1/2 on the other side and press into the meat

Cook in a medium hot skillet about 8 minutes, flipping halfway through.

Enjoy!


Crab Seviche over Micro Green Salad

100g Crab Meat
1 tbsp minced celery
1 tbsp minced fresh onion
Salt and Pepper to taste
Juice of 1 lime (or 1/2 lemon)
1 shake of red pepper flakes
2 tsp apple cider vinegar
1 packet stevia sweetener

Mix all ingredients together well in a bowl and let sit in the refrigerator for at least 2 hours (the longer the better). Stir or shake up the container occasionally to mix the juices well.
Toss with baby greens (the liquid will provide a dressing) with a side of grissini breadstick.

Great summer lunch!

Curried Chicken and Cabbage Soup

100g chicken breast cubed (I've also used shrimp in the recipe)
2 c. shredded cabbage
1/2 onion
1 small tomato diced small
1 c organic fat free, sugar free vegetable broth. (or make your own)
Salt and Pepper to taste
1/2 tsp garlic powder
2 tsp curry powder

Spice the chicken with salt, pepper, garlic powder and half the curry powder.
Saute with onions in a pan. (don't overcook the chicken as it will continue to cook in the next step)
In  a sauce pan, sear and mash the tomatoes
Add broth and cabbage to the tomatoes, along with the onions and chicken and the rest of the curry powder.
Bring to a boil and then simmer until the cabbage is tender.

Great for a chilly day supper.

TIP: If you like your soups a little bit thicker, finely crush your melba or grissini and add it as a thickener.

"Honey" Mustard Dressing


1/3 cup of Apple cider vinegar
1 cup water
... 1 packet or 1 dropperful of Stevia
About 1/2 teaspoon EACH of sea salt, pepper, onion power & garlic powder (to taste)
2 1/2 tablespoons of Spicy Brown Mustard
Whisk all ingredients together.
NOTE: This makes a nice marinade as well.



Strawberry Vinegarette

Sliced Strawberries
1 tablespoon of apple cider vinegar
1 tablespoon of lemon juice
Stevia as desired
A pinch of salt
A pinch of cayenne (if spice is desired)
Black pepper as desired

HCG Roasted Asparagus

  • 100 grams asparagus
  • 1-2 cloves minced garlic
  • 1/2 t parsley
  • 1/4 t oregano
  • Black pepper
Preheat the oven to 400 degrees. Cut off the woody ends of the asparagus and place on a sheet of non-stick aluminum foil. Sprinkle the seasonings over top. Wrap all ends of the foil up tightly to make a sealed 'pocket'. Roast 15-20 minutes.


Strawberry Sorbet



 6 frozen strawberries
Sweetener of your choice
1/4 c water
Frappe the heck out of it...voila


Cooked Apple Cabbage Slaw

2 cups shredded cabbage
1/2 apple diced
1/4c onion diced
1 pkt stevia
garlic salt to taste

Saute apples and onions in a pan, I put the garlic salt on here to make the apples and onions "sweat".
Saute until apples and onions are soft. Add cabbage and water. Sprinkle stevia over cabbage.
Cover and simmer until cabbage is soft.

This is one of my favorite side dishes. I also add some curry powder sometimes for a different flavor.


Meatloaf Muffin

100grm lean ground beef
1 wasa cracker crushed
1 tbsp minced onion
1 tbsp egg white
spices (now you can flavor this up however you like, sometimes I use garlic, sea salt and pepper, sometimes I use the taco seasoning mix)
1 tbsp sugar free tomato paste
1 pkt stevia

Mix ground beef, cracker, onion, egg white and spices until thouroughly blended.
Put your meatloaf mixture into a muffin tin.

Mix together tomato paste, stevia and a little water for consistency. Pour over the top of the meatloaf
Bake for 20 min on 350.

Cucumber Dill Salad

1 cucumber (peeled and julienned, you can actually cut the cucumber however you like)
1 garlic clove
1/3 c plain greek yogurt (I use siggis, very low sugar)
2 tsp lemon juice
1 sm onion
1 sm bunch dill or 1 tsp dried dill
Salt and pepper to taste

Julienne the cucumber. set aside
In a bowl, beat together, the rest of the ingredients. Add cucumber and toss.

For the whole batch:
66 cal.
.4gr fat
8gr carb
7.7gr protein


Beef or Chicken Fajita

This is a really yummy but simple recipe. You can use beef or chicken. And have it either as a lettuce wrap or salad.

100g of beef or chicken sliced super thin.
1/2 medium white onion also sliced thin.
1 tsp fajita seasoning (badia brand is sugar free)
3 tbsp of salsa (most of the salsa in the refridgerated section of the grocery store has no added sugar) or make your own.
Romaine Lettuce leaves or shredded lettuce.
Saute all ingredients in a pan until meat is cooked and onions are soft.

For wraps, separate the meat and distribute evenly among the romaine leaves (wraps) and top wit salsa.

For the salad, 2-3 c of shredded lettuce on a plate, top with fajita mixture and salsa! (no dressing needed)

For Phase 3, add peppers to the meat and onion mixture. and sprinkle monteray jack on top. Add a dollop of Sour Cream. YUMMY!
